Winter Beetroot Salad
2 medium beets, cooked
1/4 cup raisins
1/4 cup dried apricots, chopped
1/4 cup walnuts
2 tbsp olive oil
Grate beetroot and place in a medium bowl.
Add raisins, dried apricots, walnuts.
Drizzle with olive oil. Add salt and pepper to taste.
Mix and serve.
