Veg Spicy Rice ft Onion and Carrot
I prefer rice to bread when eating soups or any stew. Curry rice, spicy rice, sweet rice with raisins and fruits , arroz con leche, leftover fried rice … there are plenty of ways to cook the rice.
Here I offer you to cook a Vegetarian Spicy Rice with Onion and Carrot. Just some tips that help me to make a fluffy rice.
- Use a long-grain rice.
- My ideal rice/water proportion is 1/1,5. But when I try any rice for the first time I always follow the proportion indicated on the package. Sometimes the 1/2 proportion works perfectly.
- Do not to stir.
- Do not remove the lid after boiling. OK, if you don’t have a VERY big pot you will remove the lid cause the water will escape. In this case put the lid on the pot tilting it to allow steam to escape. And when the water level reaches the rice level then you may close the lid tightly.
- Let it rest.

- one carrot
- one onion
- hot pepper
- a cup of long-grain rice
- 1 1/2 cup of water (or vegetable stock)
- olive oil
How To Cook Vegetarian Spicy Rice With Onion And Carrot Step-by-step
Wash, peel and cut the onion and the carrot into medium size cubes (or any other shape you prefer). Wash and cut the hot pepper. Don’t add the seeds if you don’t desire your rice to be very, really very hot. Then heat the olive oil (or any other oil you wish but the olive oil gives a special taste for the vegetables) and add the onion and the carrot. Stir gently and cook on a low heat for about 5 minutes. Now add the rice. Stir it well and let it cook for 2 minutes. Add the salt (or miss this step as I do) and add the water or the stock.
Stir it for the last time, bring to a boil on a high heat. Then reduce to a simmer, put on the lid (tilting it to allow steam to escape if the pot is not big). Let it cook until there is no liquid left in a pot. DO NOT STIR. Use a toothpick for check the water level. It will take at about 12-15 minutes.
There is no liquid left? Turn off the heat and let the rice rest for 5 minutes. Then make some holes in it with a fork. Return the lid on and let it rest for another 5 minutes.
