Ultimate Eggplant Sauce for Pasta or Pizza

Ingredients for 2 portions:
1 eggplant, peeled and chopped
1 clove garlic, chopped
¼ cup olive oil
¼ salt
dash black pepper
hot water

Method:

Heat a deep saucepan on medium heat, add olive oil. Add garlic and cook until fragrant. Now add eggplant, salt and pepper. Give a good stir. Pour in water. It should almost cover the eggplant. Bring to a boil, turn the heat down, put on the lid and cook for 20-30 min. The eggplant will start melting. Cook until desired thickness. Adjust salt and pepper.
