Stuffed Cabbage Leaves
There are dishes around the world supporting the idea to stuff leaves of cabbage or grape leaves with anything, and especially containing meat, or minced meat. This cooking recipe in particular appears very close to a Russian version (maybe a couple of mods we put over it), Russian Golubtsi, when we stuff cabbage leaves with minced meat, rice and vegetables.
1 medium cabbage
500 g minced meat
100 g rice
1 medium onion, finely chopped
300 g sour cream or greek yogurt
300 g tomato sauce or paste
2-3 cloves of garlic, minced (optional)
First of all we will remove cabbage leaves.
Boil water in a large saucepan (3-4 liters). Dip the leaves into boiling water.
Hold until soft (2-3 minutes). Remove the leaves with a skimmer. Set aside to cool.
Mix rice and minced meat. Add onions, salt and pepper. Mix.
Place 1-2 tbsp of minced meat in the center of a cabbage leaf. Roll the cabbage leaf around the meat mixture. You cand also secure it with toothpicks.
In a large saucepan, mix sour cream/greek yogurt and tomato sauce.
Add garlic and liitle salt. Mix.
In a large dutch oven or heavy-bottomed saucepan, heat vegetable oil on a medium heat and fry cabbage rolls on each side until golden.
Add sauce and enough water to cover the cabbage rolls. Cover with a lid.
Simmer for 35-40 minutes.
Serve with sour cream and sauce in which cabbage rolls were stewed.
