Salted Cod with Potato

First of all you need to desalt the fish. Place salted cod in a large bowl with cold water to cover. Soak for 12 hours. Change the water every 3 hours. Always keep it in the refrigerator. You can soak it longer if you prefer.
Ingredients:
2 cloves of garlic, finely chopped
½ onion, finely chopped
3 chili peppers, finely chopped
1 potato, cubed
½ tsp salt
1 tbsp olive oil
1 tsp black pepper
½ cup tomato purée
2 cups desalted and shredded cod
parsley
Method:
In a small pot, add enough water to cover potatoes. Add salt and bring to a boil over high heat. Once it comes to a boil, lower the heat and cook until soft, about 10 minutes. Drain.
In a large skillet over medium heat, add the oil and heat. Then add the onions and cook for 3 minutes.
Add garlic and chili peppers and continue cooking for 3 more minutes.
Add the tomato purée and black pepper. Give a good stir.
Now add the shredded cod and potato. Stir. Add some water if needed and cook for 5 to 7 minutes.
Garnish with parsley.
