Red Beans with Vegetables

This is a cheap and effective recipe. Just taking care of the beans quality, I tried Brazilian ones for that, and the dish got beautiful, and even more tasty when more spicy: Like garlick or red chilli 😋👍

Ingredients:

1/2 cup red beans, soaked overnight

4 medium potatoes, cut into chunks

200 g bacon, cut into strips

2 medium onions, cut into wedges

2 medium carrots, cut into half-moons

1 bell pepper, cut into slices

2 medium tomatoes, cubed

salt

black pepper or chili pepper flakes

2 tbsp oil for frying, vegetable or soy bean

Method:

Drain and rinse soaked beans. Place them in a large pot and cover with 4 cups of water. Simmer until soft. DO NOT SALT.

Drain cooked beans. Leave simmering water.

In a large heavy skillet or pot, heat the oil . Add onions and fry on medium low heat until transparent.

Add bacon and fry for 3 min.

Add carrots and bell pepper. Fry for another 5 min.

Transfer to the skillet potatoes and tomatoes, season with salt and pepper. Stir carefully.

Add a ladleful of simmering water. Cover and cook on a low heat until potatoes are almost ready. Add more simmering water if needed.

Add cooked beans and continue to cook without lid until desired thickness is reached.

Remove from the heat. Cover and let it rest for 10-15 min.
