Potato Pancakes


1 medium potato

1 egg

2-3 tbsp AP Flour (sometimes marked as 0000)

Veg Oil or Cooking fat


Finely grate potatoes. Drain off any excess of juices. Mix in the egg and a pinch of salt. Now add flour. Mix until homogeneous.

Preheat the frying pan. Add enough oil to cover the bottom of the pan. Heat until hot but not smoking.

Drop 1 tbsp portion of the batter into the pan and flatten to form a pancake.

Fry both sides until golden color.

Some chefs add Onion minced into the original mixture.

Serve with sour cream.
