Italian Cooking Recipe - Layered Roasted Vegetables Mix under Cheese and Potato Crust

Ingredients:

1 small eggplant, cut into long thin sliced
1 small zucchini, cut into long thin slices

2 medium bell peppers

1 red potato, wash, do not peel, cut into long thin circles

grated parmisan

provola cheese, you can substitute by any other smoked cheese, cut in little cubes

bread crumbs

salt

black pepper

olive oil



Method:

Preheat the oven to 180ÂșC. Grease the baking dish with olive oil, sprinkle with breadcrumbs.

Start layering:

eggplant, drizzle with olive oil, salt and pepper, put some pieces of provola, sprinkle with parmisan, and then with breadcrumbs

zucchini,  drizzle with olive oil, salt and pepper, put some pieces of provola, sprinkle with parmisan, and then with breadcrumbs

bell pepper, drizzle with olive oil, salt and pepper, put some pieces of provola, sprinkle with parmisan, and then with breadcrumbs

potatoes, drizzle with olive oil, salt and pepper, sprinkle only with parmisan and breadcrumbs, drizzle with olive oil.

Roast for 70 min.
