Fresh Porcini Mushrooms Soup
Ingredients:
450-500 g porcini mushrooms, cleaned and cubed
600 g potatoes, cubed
150 g carrots, grated
150 g onions, chopped
2 bay leaves
salt
pepper
scallion for serving
Method:
Boil water in a large soup pot.
Add mushrooms, salt and pepper.
Cook for 30 minutes over low heat. . Add potatoes. Cook for 7-10 minutes. Add onion and carrots. Cook until potatoes are tender.
Add the bay leaf, cover and let it rest for 10-15 min. Discard bay leaves,
sprinkle with scallions and
