Cod Fish Baked With Cabbage
2 medium Cod fillets
1 medium onion, sliced
1/4 cabbage, cut into wide edges
1 tsp wine vinegar
2 tbsp olive oil
your favorite spices
In a large bowl, mix olive oil and wine vinegar. Add 1/2 tsp salt, a pinch of black pepper and other spices you prefer. Mix well.
Rub cod fillets with olive oil mixture. Allow to marinate for 30 min.
Preheat the oven to 170-180ºC.
Arrange the vegetables in a baking tray. Put cod fillets on the top, add some water (2-3 tbsp). Cover the tray with aluminium foil and seal around the edges.
Bake for 15 min. Then carefully remove the foil and brush the fillets with juices from the bottom of the tray. Cover again with the foil. Bake for another 15 min.
Remove the foil and grill for 2-3 min.
