Sweet Caramel Cookies


2 egg yolks

150 g butter, room temperature OR 120 g vegetable oil

2 cups sugar

1 cut boiling water

2 tsp baking powder

A/P flour as much as needed, approx. 5 cups


Whisk together egg yolks, 1 cup sugar and butter.

For burnt sugar syrup, dissolve 1 cup of sugar in a medium saucepan. Cook on a medium heat until sugar melts, stirring constantly. Continue on a low heat until it becomes a very very dark brown. Remove from the heat. Gradually add 1 cup of boiling water. CARE: IT WILL SPLATTER

Return on the heat and cook 1 min more. Let it cool 2 minutes.

Pour into the syrup yolk mixture, mix well.

Add 2 cups of flour, baking powder. Mix. Continue mixing adding the flour gradually until soft and elastic dough forms.

Preheat the oven to 180 C.

Roll out the dough 1 cm thick. Using a knife, cut the dough into squares. Or form small round cookies by hands.

Arrange cookies on a lightly greased baking pan. Cook until lightly golden.
