Baked Zucchini


1 kg zucchini, coarsely grated

1 medium onion, chopped

1 medium carrot, coarsely grated (optional)

2 garlic cloves

1/5 cup of dill

3-4 eggs

40 g salted butter

100 – 150 g cheese, coarsely grated


1 tsp baking powder

3-4 tbsp flour

2 tbsp oil for frying


Place grated zucchini in a colander. Sprinkle with a little salt and let sit for 10 min. Drain zucchini completely using your hands.

Heat vegetable oil in a saucepan over medium heat. Add onion and carrots. Fry until onion is transparent. Let it cool.

Preheat oven to 180 ºС.

In a large bowl, mix drained zucchini, onions and carrots mix, garlic, dill, eggs, 1/2 cheese, butter and flour.

Transfer  to a greased mold, arrange another 1/2 of cheese over the top.

Bake for 60 min or until golden brown.
